For these super cute filled vegan Easter Eggs, we made a batch of chocolate using the recipe from here>> Easy Vegan Raw Chocolate Recipes (choose from 2 simple & delicious raw chocolate recipes with full instructions - one for chocolate with a 'snap' and the other a softer, more melt-in-the-mouth version :)
Spoon a little of the melted chocolate mixture into your moulds so each egg is about 1/3 full and pop them into the freezer to set.
Next, make your fillings!
Strawberry Cream Filling:
1/4 cup strawberries
1 tbsp maple syrup
2 Tbsp coconut cream
Salted Peanut Butter Caramel Filling:
3T peanut butter
2T almond milk
1T maple syrup
a pinch of seasalt
Take your moulds out of the freezer and carefully place a teaspoon of your filling onto the solidified chocolate. Pour over a little more melted chocolate to fill the mould, and pop back in the fridge or freezer to firm up.
